The Duke 59-E3XX/PFB-1 electric proofer oven has a proofing cabinet in its base and a convection oven on top—an ideal arrangement for establishments that regularly produce moderate amounts of bread. This oven has a temperature range of 200 to 500 degrees Fahrenheit and its countdown timer can be set to any time under 12 hours. Its two-speed fan circulates air around the cavity for even heat distribution.
The proofing base of the Duke 59-E3XX/PFB-1 electric proofer oven accommodates 16 racks of dough. This compartment has solid-state temperature controls and its timer can be set to a time less than 1 hour. A water reservoir in this compartment prevents dough from drying out during proofing, and a single glass-paneled door enables users to observe the progress of their doughs inside the unit.
